The only thing I would say is to make more than you think you will need as most people will want more than one portion. Crack eggs into a small bowl, give a little whisk and pour over veggie mixture. I am not one to waste food and I also know that if I cook down certain vegetables (hello, spinach, I’m looking at you)their volume is decreased to almost nothing.
